Cucumber Salad

The day before Thanksgiving and most are prepping as best they can for the big feast tomorrow.  Here is a low fat/calorie, recipe that is quick and easy for the dinner before the big day.  Some people actually serve this as a part of their feast.  It also fills you up so that you could eat it by itself. Although I prefer to pair it with a sushi roll.  Check back soon for my sushi roll recipe special blog.


Cucumber Salad


½ c. rice wine vinegar
2 tbl. Sugar
1 tbl. Sesame oil
1 tbl. Cooking sherry
Salt/pepper to taste
¼ tsp. dill
1 tsp. chopped garlic
1 tsp. chopped onion

Mix ingredients together. Cut cucumbers into thin slices, marinate with dressing.  Serve.
